Most of what your team is being sold right now is a generic product with a subscription, running on infrastructure in another country, processing your data under terms you did not negotiate and cannot change. That is a reasonable trade for some things. It is a poor one for the systems your business actually runs on, and an unacceptable one where the data is sensitive. We are not the cheapest way to get software built, and if your requirement is simple, well defined and not especially sensitive, an offshore shop or an off-the-shelf product will serve you better. We will tell you so. Where we earn our place is work that is any of the following.

What does custom software development cost?
Every build is scoped and priced upfront, including the ongoing running and support costs, before a line of code is written. If an off-the-shelf product does the job for less, we will tell you to buy it instead.

The engineering that matters is response latency and the integration into your actual systems, because an agent that is slow or that cannot see your data is just an expensive answering machine.
Where is our data processed and stored if we use AI?
Onshore, at every step. The software is developed by our own team in Australia, hosted in Australian Azure regions, processed by models running in Australia, and stored here including backups. Most generic AI and SaaS tools can only offer some of that, usually the hosting, which is why this comes up so quickly with healthcare, professional services and anyone with contractual or regulatory limits on where data can go.
